My weekend was jam packed so productivity was at an all time low, but fun and friendship scored high!
There was green living festival to start off the fun where we discovered Italian Zucchini. I guess it is called the Italian Trombone for its long, curly shape! The kids wanted to try it so we brought it home and I made a simple, gluten free pasta using the Tinkadia Rice Pasta. I sauteed the zucchini in some garlic, garlic scapes, EVOO and de-glazed the pan in white wine and added it to the pasta with some more EVOO drizzled on top!
It was delicious, quite a bit sweeter than the typical zucchini we normally get from the market but it was a nice change of pace.
Saturday night I had some girlfriends over and a local painting studio came to my home for a poolside painting party!
It was quite the relaxing evening filled with food, wine and lots of fun and great conversation. We were painting a koi fish scene that was a bit challenging but fun as even baby girl and hubby got in on the painting.
The weather was perfect, as it was overcast, compared to the hot sun we had all day.
Sunday marked 9 years since my son came into our family through adoption. We use the term “Family Day” and celebrate it just like another birthday.
This year my son wanted to head to a local amusement center that has both indoor and outdoor activities followed by lunch and some shopping.
He hit the jackpot when he won 1,000 tickets at this arcade game and was over the moon with excitement! He still hasn’t stopped talking about it and we had a great day together!
Now, honestly one of the highlights for me was running in my Gel-Nimbus 16s from ASICS! Designed as a neutral shoe for underpronators to mild overpronators, it felt like I was running on a cloud!
After I headed out for my second run in them, I realized that I forgot to switch the inserts out for my custom inserts that I use for my PF issue. It didn’t seem to matter as less than a half a mile in, I was pain free.
So far I don’t have enough miles to give them a full review, but let’s just say I may have found a new favorite shoe if I keep having runs like I have the past few days! Time will tell and look forward to my full review coming up later this month.
I have gotten in the habit of buying the same brand and models of shoes and have not really tried anything new in the last few months so this is a nice change! I really should switch things out more often.
